[skip ci] Fix/broken server startup due to incorrect env vars in docker compose file (#88)

Browse Source 
* Remove '"' from the FlareSolverr url in compose file

Causes the "startup_script.sh" to throw an error

* Comment out default env vars in compose file

* Update "env vars" readme section
